Kohlrabi Apple Horseradish Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 medium kohlrabi, peeled and chopped
  • 1 medium apple, peeled, cored and chopped
  • 4 cups vegetable stock
  • 1/2 cup heavy cream
  • 1 tablespoon horseradish prepared
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and cook until softened, about 5 minutes.
  • Add kohlrabi and apple and cook, stirring for 3 minutes.
  • Pour in vegetable stock and bring to a boil.
  • Reduce heat to low, cover, and simmer for 25 minutes, or until kohlrabi is tender.
  • Puree the soup with an immersion blender or in a regular blender.
  • Stir in cream and horseradish.
  • Season with salt and pepper to taste.
  • Serve hot.
