Instructions
Heat olive oil in a large pot over medium heat.
Add onion and cook until softened, about 5 minutes.
Add kohlrabi and apple and cook, stirring for 3 minutes.
Pour in vegetable stock and bring to a boil.
Reduce heat to low, cover, and simmer for 25 minutes, or until kohlrabi is tender.
Puree the soup with an immersion blender or in a regular blender.
Stir in cream and horseradish.
Season with salt and pepper to taste.
Serve hot.
