Lasagna Soup (Crockpot)

Ingredients
  

  • 1 lb ground beef
  • 1 onion medium onion, chopped
  • 2 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 15 oz tomato sauce
  • 15 oz tomato paste
  • 4 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz rotini pasta
  • 1 cup ricotta cheese
  • 1/2 cup parmesan cheese, grated

Instructions
 

  • Brown ground beef in a skillet and drain off any excess grease.
  • Add browned beef to a slow cooker. Add onion and garlic to the slow cooker.
  • Add crushed tomatoes, tomato sauce, tomato paste, beef broth, oregano, basil, salt, and pepper to the slow cooker.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • During the last 30 minutes of cooking, add rotini pasta.
  • Stir in ricotta cheese and parmesan cheese before serving.
