Leftover Turkey Soup with Stuffing Croutons

Ingredients
  

  • 2 cups Cooked and diced Turkey
  • 1 cup celery slices
  • 1 cup carrot slices
  • 1 medium onion chopped
  • 48 oz chicken or turkey broth
  • 1 cup prepared stuffing
  • to taste salt and pepper

Instructions
 

  • Preheat oven to 350°.
  • Place turkey, celery, carrots, onion, and broth into a large pot and heat to boiling.
  • Boil for 5 minutes then turn the heat down to a simmer.
  • Let the soup simmer for 20 minutes.
  • Meanwhile, place stuffing in small rounds on a greased baking sheet.
  • Bake the stuffing for around 15 minutes or until the stuffing browns on the edges.
  • Put soup into serving bowls and top with the stuffing croutons.
  • Enjoy!
