Lemony Garlic Chicken and Orzo Soup

Ingredients
  

  • 2 each chicken breasts
  • 1/4 cup extra virgin olive oil
  • 8-12 cloves garlic smashed
  • 6 each carrots chopped
  • 1 tablespoon fresh sage chopped
  • 1 tablespoon fresh thyme leaves
  • 8 cups low sodium chicken broth
  • 1 each bay leaf
  • 1 each parmesan rind
  • 1 pinch crushed red pepper flakes
  • 1 bunch Tuscan kale roughly chopped
  • 1 tablespoon fresh chopped dill
  • 2 each lemons juice of
  • 1 pound orzo pasta
  • to taste salt
  • to taste pepper

Instructions
 

  • Combine all ingredients (except orzo) in a large pot and bring to a boil. Reduce heat and simmer for 20-25 minutes, or until carrots are tender.
  • Add orzo pasta and cook according to package directions.
  • Season with salt and pepper to taste.
  • Serve immediately, garnished with fresh dill if desired.
