Lentil Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion onion, chopped
  • 2 carrots carrots, chopped
  • 2 celery stalks celery stalks, chopped
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 cup brown or green lentils, rinsed
  • 6 cups vegetable broth
  • 1 bay leaf bay leaf
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Stir in thyme and oregano and cook for 1 minute more.
  • Add lentils, vegetable broth, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  • Remove bay leaf. Season with salt and pepper to taste.
