Liver Dumpling Soup

Ingredients
  

  • 6 oz beef liver
  • 1 medium onion chopped
  • 2 tablespoons butter
  • 4 cups beef broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped parsley
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Cut the beef liver into small pieces.
  • Sauté the chopped onion in butter until softened.
  • Add the beef liver to the pan and cook until browned.
  • Pour in the beef broth and bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Stir in the heavy cream and chopped parsley.
  • Season with salt and pepper to taste.
