Instructions
Place chicken breast in the crockpot.
Drizzle with olive oil and season with salt and pepper.
Add diced onion and minced garlic to the crockpot.
Pour in chicken broth and diced tomatoes.
Sprinkle with Italian seasoning.
Add cauliflower and broccoli florets.
Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Shred the chicken with two forks before serving.
