Midwinter Night's Dream Soup

Ingredients
  

  • 1 tbsp Olive Oil
  • 1 large Yellow Onion chopped
  • 2 cloves Garlic minced
  • 1 lb Butternut Squash peeled, seeded, and cubed
  • 4 cups Vegetable Broth
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/4 tsp Cayenne Pepper
  • Salt to taste Salt
  • Pepper to taste Pepper
  • 1/2 cup Heavy Cream
  • 2 tbsp Maple Syrup

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until squash is tender.
  • Carefully transfer soup to a blender (or use an immersion blender) and blend until smooth.
  • Return soup to pot. Stir in cinnamon, nutmeg, cayenne pepper, salt, and pepper.
  • Stir in heavy cream and maple syrup. Heat through.
  • Serve warm.
