Miso Carrot Sweet Potato Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cups carrots chopped
  • 2 cups sweet potato chopped
  • 4 cups vegetable broth
  • 2 tablespoons miso paste
  • 1/2 cup coconut milk
  • to taste salt
  • to taste pepper
  • for garnish green onion chopped
  • for garnish teaspoon sesame oil

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add carrots and sweet potato and cook for another 5 minutes, stirring occasionally.
  • Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until vegetables are tender.
  • Remove from heat and blend using an immersion blender. If you don’t have this handy tool, blend in batches using a regular blender.
  • Whisk in the miso paste and coconut milk.
  • Season to taste. Garnish with fresh green onion and a drizzle of sesame oil and enjoy!
