onion
diced

carrots
chopped

sweet potato
chopped

vegetable broth

miso paste
1/2
cup
coconut milk
to taste
salt
to taste
pepper
for garnish
green onion
chopped
for garnish
teaspoon
sesame oil
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add carrots and sweet potato and cook for another 5 minutes, stirring occasionally.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until vegetables are tender.
Remove from heat and blend using an immersion blender. If you don’t have this handy tool, blend in batches using a regular blender.
Whisk in the miso paste and coconut milk.
Season to taste. Garnish with fresh green onion and a drizzle of sesame oil and enjoy!
