Instructions
Wash and chop all the vegetables.
In a large pot, heat the olive oil over medium heat.
Add the chopped vegetables to the pot and cook for about 10-15 minutes, until slightly softened.
Add enough water to cover the vegetables. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the vegetables are tender.
Season with salt and turmeric powder to taste.
Serve hot.
