New Year's Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 large onion thinly sliced
  • 1/4 cup chopped walnuts toasted
  • 6 cups vegetable broth
  • 1 cup red lentils
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 4 oz spinach
  • 1/4 cup chopped cilantro
  • 2 tablespoons lemon juice
  • 1/4 cup Greek yogurt or sour cream for topping

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add lentils, cumin, turmeric, and cayenne pepper to the pot. Cook for 1 minute, stirring constantly.
  • Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until lentils are tender.
  • Stir in spinach and cook until wilted, about 2 minutes.
  • Remove from heat and stir in lemon juice.
  • Serve hot, topped with Greek yogurt or sour cream and chopped cilantro.
