Greek yogurt or sour cream
for topping
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add lentils, cumin, turmeric, and cayenne pepper to the pot. Cook for 1 minute, stirring constantly.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until lentils are tender.
Stir in spinach and cook until wilted, about 2 minutes.
Remove from heat and stir in lemon juice.
Serve hot, topped with Greek yogurt or sour cream and chopped cilantro.
