Nourishing Chicken Soup

Ingredients
  

  • 1 whole chicken
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 medium carrots sliced
  • 2 stalks celery chopped
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf bay leaf
  • 1/2 cup egg noodles
  • 1/4 cup fresh parsley chopped
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Add chicken broth, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  • Remove chicken and shred the meat. Return the shredded chicken to the pot.
  • Add egg noodles and cook until tender, about 8-10 minutes.
  • Stir in fresh parsley and season with salt and pepper to taste.
  • Remove bay leaf before serving.
