Ogorkowa Zupa (Polish Pickle Soup)

Ingredients
  

  • 6 cups Chicken Broth
  • 1 lb Potatoes Peeled and cubed
  • 1 cup Carrots Peeled and sliced
  • 1 cup Onion Chopped
  • 1 cup Dill Pickles Finely chopped
  • 1/2 cup Sour Cream
  • 2 tbsp Butter
  • 1 tsp Sugar
  • Salt to taste
  • Pepper to taste

Instructions
 

  • In a large pot, bring chicken broth to a boil.
  • Add potatoes and carrots. Cook until tender, about 15-20 minutes.
  • In a separate pan, melt butter and sauté onion until softened.
  • Add sautéed onion and chopped pickles to the pot with the broth and vegetables.
  • Season with sugar, salt, and pepper.
  • Simmer for another 5-10 minutes.
  • Stir in sour cream before serving.
