Pea Soup

Ingredients
  

  • 1 kg Green Peas Fresh or frozen
  • 2 liters Vegetable Broth
  • 1 large Onion Chopped
  • 2 cloves Garlic Minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Fresh Mint Chopped, for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until peas are tender.
  • Carefully blend the soup with an immersion blender or in a regular blender until smooth.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh mint.
