Ingredients
  

  • 4 cups cucumber, chopped
  • 2 cups pineapple, chopped
  • 1/4 cup red onion, chopped
  • 1 jalapeno jalapeno, seeded and chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Combine all ingredients in a blender.
  • Blend until smooth.
  • Chill for at least 30 minutes before serving.
