Pinto Bean, Green Chile, and Beef Soup

Ingredients
  

  • 1 pound ground beef or ground turkey
  • 1 tablespoon olive oil optional, if using lean beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups cooked pinto beans or 1 can (15 oz), drained and rinsed
  • 1 can (4 oz) diced green chiles mild or hot
  • 1 can (14.5 oz) diced tomatoes with juices
  • 4 cups beef broth or chicken/vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder optional
  • 1 cup corn optional
  • to taste salt and pepper
  • 1 cup frozen corn optional

Instructions
 

  • Brown the ground beef in a large pot or Dutch oven. Drain off any excess grease.
  • Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the pinto beans, green chiles, diced tomatoes, beef broth, cumin, and chili powder. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the flavors have melded.
  • Season with salt and pepper to taste.
  • Serve hot with your favorite toppings, such as sour cream, cheese, or avocado.
