Pork and Apple Soup with Bacon

Ingredients
  

  • 4 slices thick-cut bacon chopped
  • 2 medium Granny Smith apples cored, peeled, and chopped
  • 2 medium onions sliced
  • 3-4 cloves garlic minced
  • 2-3 lb pork shoulder roast
  • 64 oz chicken or vegetable broth
  • 1 tsp seasonings except salt
  • 1 bay leaves bay leaves
  • to taste salt

Instructions
 

  • Cook bacon in a large pot until crispy. Remove bacon and set aside, leaving rendered fat in the pot.
  • Add apples, onions, and garlic to the pot and cook until softened.
  • Nestle pork roast in the pot with the bacon, onions, apples, and garlic. Brown roast evenly on all sides.
  • Add chicken broth and seasonings (except salt). Bring to a simmer.
  • Reduce heat to low-medium, cover, and simmer for 30 minutes, or until pork roast is cooked through.
  • Remove roast from the soup and shred or roughly chop the meat. Return the meat to the soup.
  • Add salt to taste. Remove bay leaves before serving.
