Instructions
Cook bacon in a large pot until crispy. Remove bacon and set aside, leaving rendered fat in the pot.
Add apples, onions, and garlic to the pot and cook until softened.
Nestle pork roast in the pot with the bacon, onions, apples, and garlic. Brown roast evenly on all sides.
Add chicken broth and seasonings (except salt). Bring to a simmer.
Reduce heat to low-medium, cover, and simmer for 30 minutes, or until pork roast is cooked through.
Remove roast from the soup and shred or roughly chop the meat. Return the meat to the soup.
Add salt to taste. Remove bay leaves before serving.
