Pork Meatball Soup

Ingredients
  

  • 500 g pork mince
  • 50 g white breadcrumbs Stale bread is fine
  • 1 tablespoon whole grain mustard
  • 50 g grated parmesan
  • 1 sprig fresh thyme
  • 10 g butter
  • 1 tablespoon sunflower oil
  • 1 litre chicken or vegetable stock Homemade is ideal
  • 400 g chickpeas Canned
  • 2-3 handfuls fresh kale
  • 1 spring onion
  • 2 cloves garlic Crushed
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 handful fresh coriander Stalks reserved
  • 1 green chilli Optional

Instructions
 

  • Combine pork mince, breadcrumbs, mustard, parmesan, and thyme. Form into meatballs.
  • Heat oil and butter in a large pot. Brown the meatballs.
  • Add stock, chickpeas, kale, spring onion, garlic, cumin, and turmeric to the pot.
  • Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the meatballs are cooked through and the kale is tender.
  • Garnish with fresh coriander before serving.
