Potato and Zucchini Soup

Ingredients
  

  • 1 kg Potatoes Peeled and chopped
  • 2 medium Zucchini Chopped
  • 1 tbsp Olive oil For sauteing
  • 4 cups Vegetable broth
  • to taste Salt
  • to taste Pepper
  • for garnish Parmesan cheese
  • for garnish tbsp Olive oil Good quality

Instructions
 

  • Heat olive oil in a large pot.
  • Add chopped potatoes and zucchini and saute for a few minutes.
  • Pour in vegetable broth and bring to a boil.
  • Reduce heat and simmer until potatoes and zucchini are tender (about 20-25 minutes).
  • Blend the soup using a food processor or stick blender until smooth.
  • Season with salt and pepper to taste.
  • Serve hot with a drizzle of olive oil, grated parmesan cheese.
