Ingredients
  

  • 2 pounds Yellow Finn potatoes Skins left on, quartered
  • 2 large Leeks cleaned and sliced
  • 6 cups Water
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions
 

  • Place potatoes, leeks, water, salt, and pepper in a large pot.
  • Bring to a boil, then reduce heat and simmer for 35 minutes, or until potatoes are tender.
  • Serve hot.
