diced tomatoes with green chilies
undrained

Velveeta cheese
cubed
to taste
salt
to taste
pepper
optional
chives
freshly snipped, for garnish
optional
parsley
freshly minced, for garnish
Instructions
Place potatoes and onions in a large pot.
Add enough water to cover.
Cook until tender, but not mushy.
Add diced tomatoes and chilies.
Cook until blended.
Add salt and pepper to taste.
Add Velveeta cheese and stir until melted.
Garnish with chives and parsley, if desired.
