Ingredients
  

  • 4-5 lbs potatoes peeled and diced
  • 1 large onion chopped
  • 15 oz diced tomatoes with green chilies undrained
  • 1-1.5 lbs Velveeta cheese cubed
  • to taste salt
  • to taste pepper
  • optional chives freshly snipped, for garnish
  • optional parsley freshly minced, for garnish

Instructions
 

  • Place potatoes and onions in a large pot.
  • Add enough water to cover.
  • Cook until tender, but not mushy.
  • Add diced tomatoes and chilies.
  • Cook until blended.
  • Add salt and pepper to taste.
  • Add Velveeta cheese and stir until melted.
  • Garnish with chives and parsley, if desired.
