Potato Soup

Ingredients
  

  • 1 kg Potatoes Yukon Gold or similar
  • 1 medium Onion chopped
  • 4 cups Vegetable Broth
  • 1/2 cup Heavy Cream
  • 2 tablespoons Butter
  • 1/4 teaspoon White Pepper
  • Salt to taste Salt

Instructions
 

  • Peel and chop the potatoes into roughly 1-inch pieces.
  • In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
  • Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  • Return the soup to the pot and stir in the heavy cream and white pepper. Heat through gently, but do not boil.
  • Season with salt to taste.
