Instructions
Peel and chop the potatoes into roughly 1-inch pieces.
In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
Return the soup to the pot and stir in the heavy cream and white pepper. Heat through gently, but do not boil.
Season with salt to taste.
