Pressure Cooker Ham and Bean Soup

Ingredients
  

  • 1 lb dried great northern beans
  • 8 cups water
  • 1 lb ham hock
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1/2 tsp black pepper

Instructions
 

  • Rinse the beans and place them in the pressure cooker.
  • Add the water, ham hock, onion, carrots, celery, thyme, bay leaf, and pepper to the pressure cooker.
  • Close and lock the lid of the pressure cooker.
  • Cook on high pressure for 60 minutes.
  • Allow the pressure to release naturally.
  • Remove the ham hock and shred the meat. Discard the bone and skin.
  • Return the shredded ham to the soup. Stir and serve.
