Pumpkin and Potato Soup

Ingredients
  

  • 500g g Pumpkin peeled and cut into chunks
  • 125g g Potato peeled and cut into chunks
  • 1 large Onion thinly sliced
  • 1 cup Vegetable stock
  • ½ cup Fresh parsley chopped
  • to taste Sea salt
  • to taste Cracked black pepper

Instructions
 

  • Place all ingredients in a large pan and barely cover with water.
  • Simmer until tender with the lid on for approximately 30 – 45 minutes.
  • Season to taste and place ingredients in a blender and puree.
