Instructions
Heat olive oil in a large pot over medium heat.
Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more.
Add chopped vegetables and cook until slightly tender, about 5 minutes.
Pour in bone broth and bring to a simmer.
If using, add cooked grain or pasta.
Simmer for 10-15 minutes to allow flavors to meld.
Stir in lemon juice (if using) and season with salt and pepper to taste.
Serve hot.
