Quick and Easy Tom Kha Soup

Ingredients
  

  • 1 tablespoon minced garlic
  • 2 tablespoons Nafi’s Ginger Lemongrass Condiment Or your favorite curry paste
  • 1 tablespoon gochujang
  • 2-3 tablespoons lemon or lime juice
  • 1 tablespoon dried mushrooms
  • 1 can full-fat coconut milk
  • 4 cups water
  • to taste fish sauce
  • as needed fresh chives For garnish
  • as needed fresh cilantro For garnish
  • as desired protein Pink salmon, chicken, or tofu

Instructions
 

  • In a saucepan, combine the minced garlic, Nafi’s Ginger Lemongrass Condiment, gochujang, lemon or lime juice, dried mushrooms, coconut milk, and water.
  • Bring the mixture to a simmer over medium heat. Adjust the seasoning with fish sauce to taste.
  • Portion the soup into bowls. Top each serving with fresh chives, cilantro, and your chosen protein.
