Quick & Easy Black Bean Soup

Ingredients
  

  • 1-2 tablespoons olive oil
  • 16 oz fresh salsa
  • 16 oz organic refried beans
  • 1-2 16 oz cans organic black beans, rinsed and drained
  • 1 cup water or vegetable stock
  • 1-2 tablespoons sherry Optional
  • to taste sour cream Optional garnish

Instructions
 

  • Heat olive oil in a large pot. Pour in the fresh salsa and stir.
  • Add refried beans and black beans to the salsa mixture. Stir until lumps are removed.
  • Add water or vegetable stock as needed to reach desired consistency. Warm slowly, stirring occasionally to prevent sticking.
  • If desired, add sherry just before serving.
  • Garnish with a dollop of sour cream, if desired.
