Quick Garden Cheese Soup

Ingredients
  

  • 1 package frozen mixed vegetables
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tablespoon butter
  • 1 small onion, chopped
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • In a large pot, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
  • Stir in flour and cook for 1 minute.
  • Gradually whisk in chicken broth until smooth.
  • Add frozen mixed vegetables, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in heavy cream and cheddar cheese until cheese is melted and soup is smooth.
  • Serve immediately.
