Instructions
In a large pot, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
Stir in flour and cook for 1 minute.
Gradually whisk in chicken broth until smooth.
Add frozen mixed vegetables, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
Stir in heavy cream and cheddar cheese until cheese is melted and soup is smooth.
Serve immediately.
