Red Lentil Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup red lentils rinsed
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • salt to taste
  • pepper to taste
  • 1 tablespoon lemon juice

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add red lentils, vegetable broth, cumin, and turmeric. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  • Season with salt and pepper to taste.
  • Stir in lemon juice before serving.
