Instructions
Thoroughly wash and drain the red lentils.
Place the lentils in a pot and add water or vegetable broth. Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the lentils are tender.
While the lentils are simmering, sauté the chopped onion (and optional carrots, potatoes, and garlic) in a separate pan until softened.
Add the sautéed vegetables to the pot with the lentils.
Stir in the tomato paste, salt, pepper, and cumin.
Continue to simmer for another 10-15 minutes to allow the flavors to meld.
Adjust seasoning to taste and serve hot.
