Red Lentil Soup

Ingredients
  

  • 1 cup Red Lentils
  • 1 medium Onion Finely chopped
  • 1-2 medium Carrots Optional, diced
  • 1-2 medium Potato Optional, diced
  • 1-2 cloves Garlic Optional, minced
  • 2-3 tablespoons Tomato Paste Or pepper paste
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper To taste
  • 1/4 - 1/2 teaspoon Red Pepper Flakes To taste
  • 1 teaspoon Cumin
  • 6-8 cups Water or Vegetable Broth

Instructions
 

  • Thoroughly wash and drain the red lentils.
  • Place the lentils in a pot and add water or vegetable broth. Bring to a boil, then reduce heat and simmer for about 30-40 minutes, or until the lentils are tender.
  • While the lentils are simmering, sauté the chopped onion (and optional carrots, potatoes, and garlic) in a separate pan until softened.
  • Add the sautéed vegetables to the pot with the lentils.
  • Stir in the tomato paste, salt, pepper, and cumin.
  • Continue to simmer for another 10-15 minutes to allow the flavors to meld.
  • Adjust seasoning to taste and serve hot.
