whole milk ricotta cheese

pasta water

grated parmesan cheese

red pepper flakes

Instructions
Cook pasta according to package directions, reserving 1/2 cup of pasta water before draining.
While pasta is cooking, heat olive oil in a large skillet over medium heat.
Add ricotta cheese and red pepper flakes to the skillet and cook, stirring constantly, until heated through.
Add drained pasta to the skillet with the ricotta mixture. Toss to coat.
Add pasta water, a little at a time, until the sauce reaches your desired consistency.
Stir in parmesan cheese and season with salt and pepper to taste.
Serve immediately.
