Ricotta Pasta

Ingredients
  

  • 1 lb pasta
  • 15 oz whole milk ricotta cheese
  • 1/2 cup pasta water
  • 1/4 cup grated parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes
  • salt to taste salt
  • black pepper to taste black pepper

Instructions
 

  • Cook pasta according to package directions, reserving 1/2 cup of pasta water before draining.
  • While pasta is cooking, heat olive oil in a large skillet over medium heat.
  • Add ricotta cheese and red pepper flakes to the skillet and cook, stirring constantly, until heated through.
  • Add drained pasta to the skillet with the ricotta mixture. Toss to coat.
  • Add pasta water, a little at a time, until the sauce reaches your desired consistency.
  • Stir in parmesan cheese and season with salt and pepper to taste.
  • Serve immediately.
