chopped

vegetable broth

Instructions
Preheat oven to 400°F (200°C).
Toss cauliflower florets with olive oil, salt, and pepper on a baking sheet.
Roast for 20-25 minutes, or until tender and slightly browned.
In a large pot, sauté onion until softened.
Add roasted cauliflower and vegetable broth to the pot.
Bring to a boil, then reduce heat and simmer for 15 minutes.
Use an immersion blender or regular blender to puree the soup until smooth.
Season with salt and pepper to taste.
