Ingredients
  

  • 2 lbs tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup shredded Parmesan cheese
  • 1 tsp crushed red pepper optional
  • 1/4 cup fresh basil or 1/2 tsp dried basil

Instructions
 

  • Roast tomatoes until softened.
  • Blend roasted tomatoes with heavy cream.
  • Simmer the soup for 1-2 minutes.
  • Pour into bowls and top with Parmesan cheese and crushed red pepper.
