Roasted Vegetable and Lentil Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup red lentils rinsed
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • salt to taste salt
  • pepper to taste pepper
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Add lentils, vegetable broth, thyme, and smoked paprika to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.
