Russian Split Pea Soup

Ingredients
  

  • 1 cup Split peas
  • 8 cups Water
  • 1 medium Onion chopped
  • 2 carrots Carrots chopped
  • 2 potatoes Potatoes diced
  • 1 bay leaf Bay leaf
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Black pepper or to taste

Instructions
 

  • Rinse the split peas thoroughly.
  • Place the split peas in a large pot and add the water. Bring to a boil, then reduce heat and simmer for 45 minutes.
  • Add the chopped onion and carrots to the pot and continue to simmer for 10 minutes.
  • Add the diced potatoes, bay leaf, salt, and pepper. Continue to simmer for another 10-15 minutes, or until the potatoes are tender.
  • Remove the bay leaf before serving.
