Instructions
Rinse the split peas thoroughly.
Place the split peas in a large pot and add the water. Bring to a boil, then reduce heat and simmer for 45 minutes.
Add the chopped onion and carrots to the pot and continue to simmer for 10 minutes.
Add the diced potatoes, bay leaf, salt, and pepper. Continue to simmer for another 10-15 minutes, or until the potatoes are tender.
Remove the bay leaf before serving.
