Rustic Italian Vegetable Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes 14.5 oz
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped zucchini
  • 1 cup chopped green beans
  • 1/2 cup small pasta such as ditalini
  • 1/4 cup chopped fresh parsley
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Pour in vegetable broth and diced tomatoes. Bring to a boil.
  • Add carrots, celery, and zucchini. Reduce heat and simmer for 15 minutes.
  • Add green beans and pasta. Continue to simmer for 10-15 minutes, or until pasta is cooked through.
  • Stir in parsley, salt, and pepper to taste.
  • Serve hot.
