Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more.
Pour in vegetable broth and diced tomatoes. Bring to a boil.
Add carrots, celery, and zucchini. Reduce heat and simmer for 15 minutes.
Add green beans and pasta. Continue to simmer for 10-15 minutes, or until pasta is cooked through.
Stir in parsley, salt, and pepper to taste.
Serve hot.
