Sausage and Potato Leek Soup

Ingredients
  

  • 1 lb Italian Sausage
  • 5 medium Potatoes
  • 2 large Leeks
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Spinach

Instructions
 

  • Brown sausage in a large pot. Drain off any excess grease.
  • Add potatoes and leeks to the pot. Cook until softened, about 10 minutes.
  • Pour in chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  • Stir in heavy cream and spinach. Cook until spinach is wilted, about 2 minutes.
  • Serve hot.
