Instructions
Brown sausage in a large pot. Drain off any excess grease.
Add potatoes and leeks to the pot. Cook until softened, about 10 minutes.
Pour in chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
Stir in heavy cream and spinach. Cook until spinach is wilted, about 2 minutes.
Serve hot.
