Simple Chicken Soup

Ingredients
  

  • 1 tbsp. olive oil
  • 1 onion peeled and diced
  • 3 stalks celery diced
  • 6-8 cups chicken stock
  • 3-4 carrots diced
  • 2 medium potatoes diced
  • 1 tsp. rosemary dried
  • 1 tsp. thyme dried
  • 2 pastured chicken breasts cut into bite sized pieces
  • 1 ½ - 2 tsp. sea salt
  • 2-3 garlic cloves peeled and minced
  • ¼ cup parsley
  • 1 black pepper freshly ground

Instructions
 

  • In a soup pot, saute the onion and celery in olive oil for 2-3 minutes with ½ tsp. sea salt.
  • Add stock, potato, carrots, thyme, and rosemary, plus chicken and remaining 1 tsp. sea salt.
  • Bring to a boil.
  • Cover and reduce heat to medium/low for 35-45 minutes.
  • Add garlic during the last 5 minutes.
  • Garnish with fresh parsley
