Simple Chicken Tortilla Soup

Ingredients
  

  • 10 c. chicken broth
  • 4 c. cooked chicken, chopped
  • 1 28 oz can diced tomatoes
  • 2 white onions, diced
  • 2 cloves garlic, minced
  • 1/4 c. cilantro, finely chopped
  • Salt to taste
  • Pepper to taste
  • Cheddar cheese for serving
  • Tortilla chips for serving
  • Sour cream for serving
  • Avocado for serving

Instructions
 

  • Blend diced tomatoes, onions, garlic, cilantro, salt, and pepper in a blender or food processor until slightly chunky.
  • Pour the blended mixture into a large stockpot with the chicken broth and chopped chicken.
  • Bring to a simmer, cover, and cook for 20 minutes.
  • Serve hot with tortilla chips, shredded cheese, sour cream, and avocado.
