Simple Lasagna Soup

Ingredients
  

  • 1 lb ground beef or pork (or mix half and half)
  • 1 jar pasta sauce
  • 1 cup water
  • 1 tsp Italian seasoning
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese plus more for serving
  • 1/4 cup grated Parmesan cheese
  • 8 oz lasagna noodles broken into smaller pieces

Instructions
 

  • Brown the ground beef or pork in a large pot. Drain off any excess grease.
  • Add the pasta sauce, water, and Italian seasoning to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in the broken lasagna noodles and continue to simmer until the noodles are tender, about 10-15 minutes.
  • Stir in the ricotta cheese.
  • Serve immediately, topped with shredded mozzarella and grated Parmesan cheese.
