Skinny Creamy Cauliflower Soup

Ingredients
  

  • 2 pounds cauliflower about 1 large head, chopped
  • 1/2 medium onion chopped
  • 2 cups vegetable or chicken broth reduced sodium
  • 1 cup half and half fat free
  • 1/2 cup cheese jack or Mexican blend, reduced fat, about 1 ounce, grated
  • 2 ounces bacon cooked, minced (if desired)
  • 2 green onions green onions
  • to taste black pepper cracked
  • to taste salt

Instructions
 

  • Use an immersion blender (or place ingredients in a blender) and puree.
  • Add fat free half & half and blend for about 1 minute or until desired consistency.
  • Pour into bowls and garnish with cheese, bacon (if desired) and green onions.
  • Top with cracked black pepper and salt to taste.
