Slimming Vegan Tomato Soup

Ingredients
  

  • 28 oz whole peeled tomatoes canned
  • 0.5 cup roasted red bell pepper from a jar is ok
  • 8 oz silken tofu
  • 1 tablespoon red wine vinegar
  • 1 tablespoon maple syrup
  • 1 clove garlic peeled
  • to taste salt

Instructions
 

  • Blend all ingredients until heated thoroughly or use the soup option on your blender. Alternatively, you can blend until well incorporated and then pour into a saucepan and heat on the stove.
  • Serve warm and garnish with fresh basil or thyme. Sprinkle with Nutritional Yeast for an added cheesy flavor and a protein boost.
