Ingredients
  

  • 1 pound boneless, skinless chicken breasts
  • 1 10-ounce can red enchilada sauce
  • 1 15-ounce can low-sodium black beans
  • 1 15-ounce can unsalted, diced tomatoes
  • 1 8-ounce can diced green chilis
  • 1 cup frozen corn
  • 2 cups low-sodium chicken broth
  • 3 cloves garlic, minced
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1 teaspoon chili powder

Instructions
 

  • Combine all ingredients in a slow cooker. Cook on low for 6 hours or on high for 4 hours.
