Slow Cooker Chicken Tortilla Soup

Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 1 onion yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes 14.5 oz
  • 1 can black beans 15 oz, rinsed and drained
  • 1 can corn 15 oz, drained
  • 1 cup chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • salt to taste
  • pepper to taste

Instructions
 

  • Place chicken, onion, garlic, diced tomatoes, black beans, corn, and chicken broth in a slow cooker.
  • Add chili powder, cumin, smoked paprika, salt, and pepper.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Shred the chicken with two forks.
  • Serve with your favorite toppings such as avocado, sour cream, cheese, and tortilla strips.
