Slow Cooker Creamy Tomato Tortellini Soup

Ingredients
  

  • 2 lbs Italian sausage mild or hot
  • 6 cups chicken broth homemade or store bought
  • 1 can diced tomatoes 28oz
  • 1 can tomato soup 10.75oz
  • 8 oz cream cheese
  • 1 pkg tortellini 9oz
  • 1 tsp Italian seasoning
  • 1 bay leaf bay leaf

Instructions
 

  • Brown the Italian sausage in a frying pan or slow cooker. Cook 10 minutes or until no longer pink.
  • If browning in a pan, empty contents into slow cooker.
  • Add Italian seasoning, bay leaf, tomato soup, diced tomatoes, and chicken broth to the slow cooker.
  • Cook on LOW for 6 hours (or High 4 hours).
  • Add cream cheese and stir well to combine.
  • Add tortellini and stir. Cover and cook on High for 15-20 minutes, or until tortellini is cooked.
  • Serve with crusty bread and garnish with Parmesan cheese and parsley if desired.
