Slow Cooker Minestrone Soup

Ingredients
  

  • 6 1/2 cups chicken or vegetable stock
  • 2 cans (15 oz.) Italian Style diced tomatoes
  • 1/2 large onion finely chopped
  • 1 large stalk celery finely chopped
  • 3 medium carrots sliced very thin or chopped very small
  • 2 large cloves garlic minced
  • 1 1/2 cups green beans chopped into bite sized pieces
  • 1 can (15 oz.) Cannellini beans drained and rinsed well
  • 1 can (15 oz.) Red Kidney beans drained and rinsed well
  • 1 small zucchini diced small
  • 1 package (9 oz.) frozen spinach defrosted and squeezed dry
  • 3/4 cup small pasta
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions
 

  • In a large pot or slow cooker, combine all ingredients.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Serve hot and enjoy!
