Slow Cooker Northern Bean & Spinach Soup

Ingredients
  

  • 1 cup dried northern beans rinsed (Soak overnight)
  • 2 carrots chopped
  • 1 medium onion chopped
  • 2 garlic cloves sliced
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 4 cups vegetable broth
  • 1 cup spinach
  • 1 cup cooked ham diced

Instructions
 

  • Soak beans overnight.
  • Combine beans, carrots, onion, garlic, pepper, salt, and broth in a slow cooker.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Stir in spinach and ham during the last 30 minutes of cooking.
  • Serve hot.
