Slow Cooker Tomato Basil Soup

Ingredients
  

  • 2 28 ounce cans whole peeled tomatoes
  • 1 28 ounce can tomato sauce
  • 3 tablespoons olive oil
  • 3 large carrots, peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, whole and peeled
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoon salt
  • 4 cups chicken broth
  • 1 tablespoon sugar
  • 10 leaves basil
  • 1/2 cup heavy cream
  • to taste salt and pepper

Instructions
 

  • Combine tomatoes, tomato sauce, olive oil, carrots, onion, garlic, red pepper flakes, salt, sugar, and chicken broth in a slow cooker.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Stir in basil during the last 30 minutes of cooking.
  • Use an immersion blender to blend the soup until smooth.
  • Stir in heavy cream and season with salt and pepper to taste.
