Ingredients
  

  • 3 tablespoons Olive Oil
  • 1 large Onion chopped
  • 2 carrots Carrots chopped
  • 2 celery stalks Celery chopped
  • 4 cloves Garlic minced
  • 1 large Russet Potato diced
  • 1 sweet potato Sweet Potato diced
  • 1 15oz can Diced Tomatoes undrained
  • 1 15oz can Tomato Sauce
  • 6 cups Vegetable Broth
  • 1 15oz can Cannellini Beans drained and rinsed
  • 1 15oz can Kidney Beans drained and rinsed
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions
 

  • In a large slow cooker, combine all ingredients.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Serve hot with corn muffins.
