Slow Cooker Vegetable Soup with Garlic Parmesan Twist

Ingredients
  

  • 32 oz vegetable broth
  • 1 lb mixed vegetables (carrots, celery, potatoes, etc.) Can be fresh or frozen
  • 1 onion onion chopped
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1/4 cup parmesan cheese grated, for garnish
  • 2 tbsp olive oil for garlic parmesan twist
  • 2 cloves garlic minced, for garlic parmesan twist

Instructions
 

  • Combine vegetable broth, mixed vegetables, onion, garlic, Italian seasoning, salt, and pepper in a slow cooker.
  • Cook on low for 6-8 hours or on high for 3-4 hours, or until vegetables are tender.
  • While soup is cooking, prepare the garlic parmesan twist: In a small bowl, combine olive oil and minced garlic.
  • Serve soup hot, garnished with grated parmesan cheese and a drizzle of garlic infused oil.
