Instructions
Combine vegetable broth, mixed vegetables, onion, garlic, Italian seasoning, salt, and pepper in a slow cooker.
Cook on low for 6-8 hours or on high for 3-4 hours, or until vegetables are tender.
While soup is cooking, prepare the garlic parmesan twist: In a small bowl, combine olive oil and minced garlic.
Serve soup hot, garnished with grated parmesan cheese and a drizzle of garlic infused oil.
